The Colors of the Rainbow
Everyone is watching what they eat these days. Americans seem to finally be toning down the out-of-control portions and learning about moderation. This is a fantastic ideal, but when we see interesting recipes we want to try, this leaves families of 2 (well, there are two dogs running around, but everyone knows Branny’s dogs only get the best. And “the best” is dry kibble. Sorry kiddos!) in the lurch. The husband and I just can’t devour an entire cake.
Well, we CAN. But we SHALL NOT.
So, that’s what work potlucks are for. Selfishly, I organize a monthly work potluck to meet my need to explore interesting deliciousness that may negatively affect the waistlines around here.
This month, I decided to make a cake. The inspiration for the cake was an episode of GoodEats with Alton Brown. He made a bizarre cake frosting by using avocado to replace butter. Just woah. I had to try this frosting. But I had to find a cake to stand up to such an off-the-wall topping.
Insert, the rainbow cake:

Really, though, it is just a white cake. I simply made the batter, divided it into 4 bowls, and colored each portion of the batter with your run-of-the-mill liquid food dye. I then alternated colors as a poured the batter in the cake dish:




And with a final swirl with a toothpick to combine, we have this:

Frost as desired. And what a surprise your guests will have when they slice into this baby!
