The incredible, edible … potato!?
Remember back in the 90s when the egg-farmers of America were pushing the egg?
There were animated dancing eggs all over television, there were theme songs, I even had an egg superhero toy. They were touted as the perfect food: versatile, cheap, nutritious.
But I think I’ve found a match for the egg. Like the egg, this ingredient is excelling in desserts, main courses, pasta dishes, salads, and more. What is this mystery ingredient, you ask?
None other than the Incredible, Edible, POTATO!
Today we feature this beauty in a dish that can be served as a side dish to accompany a hearty main course or as a main course itself, if accentuated with the proper ingredients
Skillet Rosemary Potatoes
1 baked potato, cubed
1/2 onion
1 T olive oil
1/2 t rosemary and dried garlic
1/4 t salt
freshly ground pepper
chopped tomato, scallions, and a fried egg (optional)
And because my mom always taught me to give credit where credit is due, thanks MOM! for being the master of breakfast potatoes with fried eggs.
