Burrito Baskets (?)
Omnivore: So, what are we having for dinner?
Me: Tofu.
Omnivore: No, really, what are we having for dinner?
Me: Burrito bowl: everything you know and love in your burrito but without the tortilla and served in a bowl.
Omnivore (after walking away from the kitchen and returning 10 minutes later): So, burrito baskets, eh?
Me: Well, sure, if you want to call it a burrito basket, that’s your prerogative. The rest of the free-world knows them as “burrito bowls, or, alternatively, naked burritos.” Call them what you want as long as you eat your dinner

Omnivore (stuffing his face with the food in the picture above): Wow, these baskets are good. They are just like a burrito, but without the tortilla. *pausing to take a breath* Like, when you are eating a burrito, and you have a blow-out on the other end, and at the end of the meal you have to eat the remnants. This whole meal is like that crap. Only better, of course.
This meal probably isn’t as ground-shaking to you as it is to the Omnivore. What can I say? This is what happens when you live in a cave for the past 32 months. People often ask “what do you make when you don’t want to make anything for dinner?” I make this.
Except this meal was actually on my menu plan, because I’m just organized like that (yeah right). But if you do not have a menu plan, then you can plan on not planning and just plan on making this.
I added ground beef to the Omnivore’s bowl. Caveman eat meat. Rawr.
Ingredients (for 2)
1 cup rice (I used leftovers)
1 tsp oregano
1 tsp lime juice
1 green onion, sliced
1 jalapeno, diced
3/4 cup black beans
1/4 cup chopped onion
1 garlic clove, minced
1/4 cup chopped bell pepper
1 t chili powder
1 t oregano
Shredded lettuce, about 1.5 cups
shredded cheese
1 tomato, diced
1/4 cup onion
1/4 cup diced green pepper
1/2 avocado, diced
sliced cucumber
For the rice: Add (cold) rice to a nonstick skillet and bring to heat. Sprinkle in lime juice and oregano. Add jalapeno and stir. Just before serving, fold in green onion.
For the beans: Saute pepper, onion, garlic in a pan with nonstick spray. Add seasonings. Add 3/4 cup black beans and about 1/4 cup of water and simmer lightly.
Assembly: Arrange lettuce in a ring around the border of your plate. Top with cucumbers, onion, and pepper. Place 1/2 portion of rice in the center of the plate. Top with beans. Finish with diced tomato, avocado, and shredded cheese.
