Black Bean and Mango Salad
My craving for this meal was like that itch
That, try as you might,
You just can’t satisfy
Until, of course, you do. And then life is so good.
One Year Ago: Walnut Bulgar Pilaf
Black Bean and Mango Salad (3 servings)
2 cups black beans
1 mango, diced
1 avocado, diced
2 T lime juice
3 T finely chopped cilantro
1/4 tsp salt
1/2 tsp chili powder
2 sliced scallions, or 1/3 cup diced red or sweet white onion
Dice mango into small cubes. Combine with black beans (rinsed and drained if using canned) and onions. Dice avocado and gently fold into bean mixture. Season mixtures with salt and chili powder, pour lime juice over, and fold cilantro into salad. Can be served immediately but best when left to marinate for an hour or so.
