Whole wheat pasta and broccoli with avocado sauce

I’m missing my husband.  We’ve been living apart now since August 1st.  That’s nearly 7 1/2 months.  I miss the day to day things.  The details that aren’t important but leave a hole in your heart when they’re missing.

I miss making him dinner and I miss him holding my hand while we watch the news.

What is it about being lonely that makes me crave carbs and fat?  Fat and carbs?

Most of the time, the cravings win.  “I’ll be better when he gets here,” I console myself.

“I deserve this treat.  This treat takes away the loneliness.”


But it doesn’t have to be bad, junky foods that fulfill those carbs and fat cravings.  Bright and healthy meals like this one can do the trick, too, if I let them.

This whole wheat pasta with bright and crisp broccoli smothered in a lemony avocado sauce is just wonderful.  I think the Omnivore would have really liked this meal.  I wish I could have made it for him.  Since it comes together in less than 15 minutes, though, I’m sure it’ll make frequent appearances on my dinner table.  Which, one day, will be OUR dinner table.

Pasta with Creamy Avocado Sauce (seen here)
1 medium sized ripe Avocado, pitted
1/2 lemon, juiced + lemon zest to garnish
2-garlic cloves
1/2 tsp kosher salt, or to taste
1/4 cup basil leaves
1/3 cup pasta cooking water
5 oz of your choice of pasta
1 crown of broccoli, cut into florest
Freshly ground black pepper, to taste

Bring several cups of water to a boil in a large pot. Add in your pasta and cook 7 minutes.  During the last minute of cooking, add your cleaned and chopped broccoli.  Drain completely and rinse in cold water.

Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and 1/3 cup of hot water (stolen from your boiling pasta!) into a food processor. Process until smooth. Now add in the pitted avocado, basil, and salt. Process until smooth and creamy.

Combine sauce with pasta and broccoli and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately. Makes 2 servings.

Serve immediately.

    Mmmm. Fat and carbs. The addition of avocado is really intriguing!

    And I hope you guys are able to reunite soon, I can’t imagine how difficult it must be.

    It has never occurred to me to use avocado as a “sauce.” Looks delicious!

    Nice work on making a comfort food meal that has lots of good-for-you stuff in it! My husband was gone for a week and it was semi-miserable… I don’t know how you can do it for almost 8 months! Hang in there!
