Bulgur Salad with Tuna and Tomatoes

I made this meal one later afternoon when my husband was driving in from out of town.  I knew he’d be passing by tempting fast food restaurants.

I knew he’d want to stop at Arby’s, and I knew he’d equally not want to stop at Arby’s.  So I sent him text messages, telling him to hurry home because I had his favorite lunch ready for him.

Neither of us knew he had a favorite lunch, but I had him on the hook.

“Yes!” he said as he sat down, “this is my favorite lunch.”

Bulgur Salad with Tuna and Tomatoes (adapted from The BH&G Healthy Family Cookbook)

Ingredients

1 cup cold water
1/2 cup bulgur
1 tsp olive oil
1 cup chopped cucumber
1 cup chopped tomato
1/4 cup snipped parsley
3 T lemon juice
1 5 oz can tuna, drained and chopped
salt and pepper

Instructions

  1. In a medium saucepan, stir together cold water and bulgur. Bring to boiling and then reduce to a simmer. Let cook for 12 minutes, or until water is absorbed. Remove from heat, cover, and prepare rest of salad.
  2. In a large bowl, stir together cucumber, tomato, parsley, tuna, lemon juice, and oil.
  3. Add bulgur and season to taste.

    That looks SO good! I can’t wait until I have a kitchen again. I haven’t cooked anything in nearly two weeks and pictures like that make me crave cooking for myself more than you can imagine.

    Confession, I have never had bulgur.  I will have to try it when my husband is out of town.  I think he would turn up his nose!  Your photos are wonderful by the way!

    So I bought bulgur for the first time and tried your recipe. It was good but my bulgur is brown not at all like what is in your picture. Is there a whole wheat and a white version of bulgur?

       The only differences I know of are “fine, medium, and coarse” ground.  Maybe yours is more coarse?
