Cinnamon Cumin Roasted Cauliflower
My husband adores raw cauliflower. He doesn’t like it cooked so much.
So he didn’t even try this side dish. I guess he didn’t try it, though, because I was being extra generous and cooked him a side of steamed green beans so he wouldn’t have to try it.
Look. You can see his plate right there. Brimming with chicken tikka masala and no cauliflower (just take my word for it and don’t object saying “but only 1/4 of the plate is showing!” Trust me, there’s no cauli).
It ended up not being too big of a deal, though, because I ate the cauliflower for dinner and is was awesome. And then I put away the leftover cauliflower, well, I tried to put away the leftover cauliflower. I accidentally ate every single floret on its way for the roasting dish to the tupperware. It was really that good!
Cumin Cinnamon Roasted Cauliflower
1 head cauliflower
2 tsp olive oil
1/4 tsp cinnamon
1/4 tsp salt
1/2 tsp cumin
- Chop cauliflower into small florets.
- Toss with olive oil and then spices.
- Place in an oven preheated to 450 degrees for 15 – 20 minutes, turning once.
