Angel hair pasta with tomatoes and basil
So as natural as it may be to cook pasta on a summer evening, it sure took us awhile to decide what was for dinner.
You see the Omnivore is a bit *ahem* possessive over his tomatoes. He grows them so I guess I should just let him be in charge of them, but it is tough.
He decides when they are to be picked from the bush, the order of which we use them, and whether a certain dish is worthy of his fruit. By the way, we have a ton of tomatoes, so it isn’t as if a screwed up recipe would be the end of the world!
Generally speaking, the Omnivore doesn’t want his tomatoes cooked. He wants them raw and au naturel. The recipe highlighted the fruit just the way he wanted them and also included basil: a match made in heaven.
Pasta with Garden Fresh Tomato Sauce
6 ounces of pasta, cooked according to package directions
2 large tomatoes, diced
1/4 cup finely chopped onion
2 large cloves of garlic, minced
1/4 cup basil leaves, julienned
1 Tablespoon high quality balsamic vinegar
2 ounces chopped smoked mozzarella cheese
- Cook pasta according to package directions.
- While pasta is cooking, combine tomatoes, onion, garlic, basil, vinegar, and cheese in a large bowl.
- When pasta is al dente, drain and toss with pasta sauce. Season with salt and serve immediately.
